And It Is A …..Snow Day!

We kind of figured that it would be a snow day today with the forecast last night and at 5:15 so this morning when I received the text I was not surprised. So I figured we would sleep in and then make some special things like soup and cookies. Well, the soup is in the crock pot and bread in the oven.

Homemade Chicken Wild Rice Soup

We had 11 snow days last year so I hope this is not a sign of things to come! This evening we will enjoy the soup and fresh bread.

I love this Chicken Wild Rice Soup:

2 quarts chicken broth
1/2 pound of fresh mushrooms
1 cup finely chopped celery
1 cup shredded carrots
1/2 cup finely chopped onion
1 tsp chicken bouillon granules
1 tsp dried parsley flakes
1/4 tsp garlic powder
1/4 tsp dried thyme
1/4 cup butter
1/4 cup all-purpose flour
1 can condensed cream of mushroom soup, undiluted
1/2 cup dry white wine or additional chicken broth
3 cups of wild rice
2 cups cubed chicken

In a large saucepan, combine the first nine ingredients. Bring to a boil. Reduce heat; cover and simmer for 30 minutes.

In a soup kettle or Dutch oven, melt butter. Stir in flour until smooth. Gradually whisk in broth mixture. Bring to a boil; cook and stir for 2 minutes or until thickened.

Whisk in soup and wine or broth. Add the rice and chicken; heat through. Yield: 14 servings (3 1/2 quarts).
